Kabuli pilau
This
dish is widely considered to be the national dish of Afghanistan.
Intensely flavoured with spices the rice is layered with the lamb to
make a hearty one dish meal. Lamb is the traditional meat but you
could substitute with beef. You will need to increase the
cooking time if not cooking this dish with the aid of a pressure
cooker.
Ingredients
Rice
- 7 cups(1.4 kg) basmati rice
- salt
- 4–5large onions diced
- 2 tbspmasala spice mix
- 2 tbspcumin seeds
- olive oil
Topping
- 100 gpistachio nuts
- 100 galmonds
- olive oil
- 2large carrots, julienned
- 250 gsultanas
Meat
- vegetable oil
- 1 cupfried onions (see Note)
- 1.5 kglamb leg meat, cut into cubes
- pinchof salt
- 1 tspblack pepper
- 2–3cardamom pods, cracked
- 2 tspmasala spice mix
- 1 tspcumin seeds
- 200 mlwater
- crushed cardamom seeds, to serve
