Bulani



The very popular bulani are pockets of Afghan bread filled with different vegetable mixtures and fried. Tear the bulani into pieces and dip into homemade plain yoghurt before eating.

Ingredients


Pumpkin filling
  • ½pumpkin peeled, deseeded and skinned
  • 2–3garlic cloves, finely chopped
  • crushed walnuts
  • salt
  • 1 tspchilli powder
  • 1 tbspcoriander seeds, crushed
  • 1 tbspvegetable oil
  • 1 largeonions, finely chopped
  • 1 tspblack pepper
Potato filling
  • 1 kgpotatoes 
  • 1 largeonion, finely chopped
  • 2–3garlic cloves, finely chopped
  • 1 tbspvegetable oil
  • 1 tspchilli powder
  • 1 tspsalt
  • ½ tspblack pepper
  • 1 tspground coriander
Onion filling
  • 2 bunchesgarlic chives or spring onions, chopped
  • ½ tspchilli powder 
  • pinchof salt
  • 1 tbspvegetable oil
Dough
  • plain flour
  • water
  • ½ tspsalt
