Breakfast burrito



Spruce up your mornings with this colourful, lightly spiced, protein-packed breakfast wrap. And as an extra treat, it’s quick enough to whip up before work. 


Ingredients


  • eggs
  • ¼ tsp ground cumin
  • ¼ tsp chilli flakes
  • ½green capsicum, diced
  • ½red capsicum, diced
  • ½red onion, chopped
  • ¼zucchini, cut into slices
  • 1 cup canned black beans, rinsed and drained
  • 4whole-wheat tortilla, warmed up
  • ¼ cup shredded cheese, like Pepper Jack or cheddar cheese
  • ¼ cup salsa or pico de gallo
  • 1 avocado, thinly sliced lengthwise
  • salt and pepper, to taste
