Ingredients
- 4 eggs
- ¼ tsp ground cumin
- ¼ tsp chilli flakes
- ½green capsicum, diced
- ½red capsicum, diced
- ½red onion, chopped
- ¼zucchini, cut into slices
- 1 cup canned black beans, rinsed and drained
- 4whole-wheat tortilla, warmed up
- ¼ cup shredded cheese, like Pepper Jack or cheddar cheese
- ¼ cup salsa or pico de gallo
- 1 avocado, thinly sliced lengthwise
- salt and pepper, to taste
